Tuscan Chicken One Pan Meal
You know how your family has those favorite weeknight recipes? The tried and true meals perfect for those busy nights rushing home from practice. I'm ALWAYS looking for more of those meals to add to the rotation.
This Tuscan Chicken One Pan meal fits the bill and had Kev and the girls asking for seconds.
Y’all, she’s a winner.
INGREDIENTS:
2 tablespoons olive oil
3, 4oz boneless, skinless chicken breast, cut into cubes
Lemon Pepper to taste
1/2 cup chopped onion
3 garlic cloves, minced
1 cup @kettleandfire chicken broth
1 cup coconut milk
1/2 cup freshly grated Parmesan cheese (optional)
1/2 cup slivered sun-dried tomatoes
1 teaspoon Italian seasoning
4 strips of bacon (cooked)
1/4 teaspoon garlic powder
3 handfuls baby spinach
INSTRUCTIONS
Cook your chicken in olive oil, seasoning it liberally with lemon pepper.
After about 8 minutes, add onions and garlic to the pan, cook down for a few more minutes.
Add in your @kettleandfire bone broth, scraping up all those yummy brown bits as you go.
Now it’s time to add in your artichoke hearts and sundried tomatoes and Italian seasoning. Cook for 5 more minutes, stirring occasionally.
Add in coconut milk and bacon. Stir.
Add in Parmesan cheese (optional) stir again.
Finally throw in that spinach and stir once more. Serve immediately with salt and pepper to taste.
This meal is perfect for low carb day. And for those days you are eating LOADS of carbs?
